Ontbijtkoek




An ontbijtkoek /onbeytkuk/ (literally translated breakfast cake)  is a Dutch-Belgian spiced cake. It is often spiced with cloves, cinnamon, ginger, succade and nutmeg.
 
Ontbijtkoek is originally served at breakfast with a thick layer of butter on top, as a replacement for bread. However due to its sweet taste it is also served as a snack.


Ingridients : 


2 cups eggs
2 cups dark brown sugar
2 cups all-purpose flour (shifted)
1/2 teaspoon salt

1/3 cup caramelized sugar
1 teaspoon ground cloves
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 pinch salt

Directions:
  1. Preheat oven to 300 degrees F.
  2. Break the eggs and combine with sugar until smooth using an electric mixer.
  3. put the flour using low speed of mixer. Batter will resemble a thick pancake batter.
  4. prepare the caramel : using small fire, caramelize the sugar and mix with 1/6 hot water, stir quickly and set aside.pour into the batter, and stir slowly.
  5. add the round cloves, cinnamon and nutmeg.
  6. Lightly coat a 8″x3″ cake pan with coconut oil and fill with the batter.
  7. chopped almonds can be sprinkled on the top. 
  8. Bake 1 hour or until an inserted toothpick comes out clean.
  9. Cool in the pan for about 30 minute. Then remove cake from pan and wrap with aluminum foil. Keep wrapped for 24 hours before serving.
  10. Keep covered or bread/cake will dry out.
